Paella a la Valenciana ($13.95), an unforgettable entree, was a large cast-iron pan literally, overflowing with rich, sunshine yellow saffron rice, sliced chorizo, chunks of falling off -the-bone-tender chicken, a small lobster split down the middle, three soft mussels and clams and large handfuls of whole shrimp and sea scallops, all brightly decorated with emerald peas, bright red pimentos, clumps of parsley and wedges of lemon."
